Don Pham, Executive Sushi Chef
Chef Pham's father, a sushi chef who owned and operated the family Japanese Restaurant, led his son to a culinary path. At the age of 21 with nearly seven years of training in the kitchen and at the sushi bar, Chef Don Pham took an incredible opportunity to begin a new culinary journey at the opening of Geisha. Chef Pham has recently been elected Executive Sushi Chef of Geisha.
Today, Chef Pham offers an exquisitely fresh range of new and traditional forms of sushi and sashimi available in an Omakase tasting. Pham only uses the highest quality of fish imported from Japan and Hawaii combined with his brilliant culinary creativity to execute the most unique sushi rolls in New York City.
Being the only sushi chef in New York City who works with Hawaiian White Tuna, Pham expresses his distinct sushi-making style when creating the White Tuna Crunch Roll. Pham mixes diced white tuna with a spicy sauce and adds asparagus, scallion and potato crunch. He then wraps these ingredients in white tuna and avocado.
In addition, this master craftsman relies on his innovation skills when creating distinctive roles for Geisha. Today Pham is currently working on three different types of sushi "sandwiches": the spiny tuna, salmon and scallop sandwich. To make the Spicy Tuna Sandwich, Pham dices blue fin tuna into small pieces then sprinkles truffle oil and adds chives and organic green. The so-called "bread" of the sandwich is made with a layer of rice then a layer of seaweed and another layer of rice.
One of Chef Pham's new and inspired rolls is the "Crispy Almond Roll". Pham uses Alaskan King Salmon and adds sea salt, black pepper and avocado. He puts these ingredients into tempura batter and then rolls chopped almonds on the outside. He then deep-fries the roll for twenty seconds.
When asked what sets Chef Pham apart from every other sushi chef in New York City, he replied: "Unlike other sushi chefs who tend to put sauces on top of the sushi, I let the ingredients work itself. I work this way because I believe we carry the best quality fish in New York City."
